In Praise of Kale… Yes Kale!

Before I begin this post, I would be remiss if I didn’t state right out of the gate that I realize I am late to the party when it comes to the superpowers of the superfood kale. Oh, I have heard and read about this amazing, nutrient-packed member of the cabbage family. In fact, given its incredibly low-calorie content, kale is among the most nutrient-dense foods in existence.

Many powerful antioxidants are found in kale, including quercetin and kaempferol, which have numerous beneficial effects on health. Kale also is extremely high in vitamin C, an antioxidant that has many important roles in the body. A single cup of raw kale actually contains more vitamin C than an orange. Kale also contains small amounts of protein and fiber. These are two of the most important nutrients when it comes to losing weight.

With all that being said, the problem for me when it came to this leafy, dark green powerhouse is that I simply couldn’t stomach it. Kale salad?… I’ll pass. Too fibrous and chewy for me. After all, what am I, a rabbit? No, I just couldn’t join ‘Team Kale’, that is, until now.

Enter the Mighty Kale Smoothie

A cornerstone of my recently adopted healthy eating program is Arbonne Protein Shake Smoothies for both breakfast and lunch. I love both the chocolate and vanilla flavors and often add in fresh, organic fruit along with almond butter or peanut butter to introduce variety.

Now, after finally getting up the courage to add mighty kale to the mix I am here to say that in a smoothie, this stuff is friggin’ delicious!! Who knew eating healthy could taste so good? Interested in trying a refreshing Kale smoothie for yourself? Give my concoction below a try. (Makes a terrific post-workout shake!)
